  best ever pastry shell
3⁄4cupbrown sugar (packed)
1⁄4cupall-purpose flour
4poundcooking apples

Roll out slightly less than half the pastry and line a 9-inch pie plate. Mix sugar, salt, cinnamon, nutmeg and flour in a bowl. Peel, core and slice apples; toss with sugar mixture. Arrange apple slices in the pie plate and dot with butter.

Roll out remaining pastry into 11-inch circle and place on top of filling. Take edges of upper and under pastry between your fingers and turn both edges under; flute to seal. Cut a few slits in the top crust to allow steam to escape. Place on lowest shelf of a 400F oven and bake 40 to 45 minutes or until crust is browned and apples are tender.
