4mediumshrimp (shelled and deveined)
2tablespoonextra-virgin olive oil
6 lettuce leaves
1⁄2 tomato (thinly sliced)
1⁄2 avocado (thinly sliced)
1teaspoonlemon juice
2tablespoonsoy sprouts


Bring 1 quart of water to a boil. Drop in the shrimp and cook 1 minute, or until pink, then drain and set aside. Heat the olive oil in a 12" skillet and add the bread; fry until golden on both sides, turning once, about 2 minutes per side over medium-high heat. Top one slice of bread with one-third of the mayonnaise, half of the lettuce leaves, half of the tomato, the shrimp, and salt. Top another slice of bread with half of the remaining mayonnaise, half of the avocado, the sprouts, half of the crabmeat, and the lemon juice. Top the third slice of bread with the remaining mayonnaise, the remaining crabmeat, the remaining tomato, the remaining avocado, and the remaining lettuce. Stack the first and second layers, and turn the third layer over onto the second, mayonnaise side down. Secure the sandwich with toothpicks; slice diagonally to create two equal triangles and enjoy.
