Tagliatelle with Prosciutto (Tagliatelle al Prosciutto)

1 1⁄2poundtagliatelle
5ounceprosciutto (thinly sliced and cut into strips 1/4" wide)
1⁄2cupparmesan cheese (grated)
  ground black pepper


Bring a pan of lightly salted water to a boil and add the tagliatelle. Meanwhile, put the butter in a small saucepan over very low heat. As soon as the butter is just melted, add the strips of prosciutto. The prosciutto must simply be heated - it must not fry.

When the tagliatelle is cooked, drain and place on a warmed serving dish. Sprinkle the tagliatelle with the grated Parmesan, grind a fair amount of pepper over it, add the ham and butter, mix, and send to the table.
