InstructionsSprinkle bananas lightly with salt. Beat eggs and cream in small bowl until well mixed. Combine coconut, Brazil nuts and cashews in medium-size bowl. Roll banana pieces in flour; dip in egg mixture; roll in nut mixture. Pour oil into large skillet to a depth of 1-1/2 inches; heat to 375°F. Fry half of the bananas in oil until light brown, about 4 minutes. Drain on paper toweling; keep warm. Repeat with remaining bananas. Serve hot. |
