InstructionsHeat oven to 375°. Generously grease a 12 cup muffin pan. Sift flours, baking soda, spices, and salt into large bowl. Beat eggs, honey, oil, and vanilla in separate bowl; blend banana, yogurt, and lemon zest into egg mixture. Quickly stir wet ingredients, along with walnuts, into dry ingredients just until flour is moistened. (Batter should be thick.) Spoon batter into muffin cups; bake until muffins are lightly browned, about 20 minutes. Serve warm, or cool on a rack. |
