Banana Nut Muffins

Ingredients

1cupwhole wheat flour
1cupall-purpose white flour
1teaspoonbaking soda
3⁄4teaspoonground cinnamon
1⁄2teaspoonground nutmeg
1pinchsalt
2 eggs
1⁄2cupmild flavored honey, or packed brown sugar
1⁄4cupsafflower oil
1teaspoonvanilla
1 1⁄3cupmashed banana, about 3 ripe medium bananas
1⁄4cupplain low-fat yogurt
1⁄2teaspoongrated lemon zest
1⁄2cupcoarsely chopped walnuts

Instructions

Heat oven to 375°. Generously grease a 12 cup muffin pan.

Sift flours, baking soda, spices, and salt into large bowl. Beat eggs, honey, oil, and vanilla in separate bowl; blend banana, yogurt, and lemon zest into egg mixture. Quickly stir wet ingredients, along with walnuts, into dry ingredients just until flour is moistened. (Batter should be thick.)

Spoon batter into muffin cups; bake until muffins are lightly browned, about 20 minutes. Serve warm, or cool on a rack.
