InstructionsCombine salt, pepper, garlic, oregano, vinegar, and oil. Let steak marinate in this for an hour, then broil over hot coals, 3 or 4 minutes on each side. Brush with marinade before turning. Carve into thin diagonal slices (against the grain). |

NotesThe number of servings will be dependent on how large the skirt steak is. You can also use this recipe with flank steak if skirt steak is not available.
