InstructionsCombine salt, pepper, garlic, oregano, vinegar, and oil. Let steak marinate in this for an hour, then broil over hot coals, 3 or 4 minutes on each side. Brush with marinade before turning. Carve into thin diagonal slices (against the grain). |

NotesThe number of servings will be dependent on how large the skirt steak is. You can also use this recipe with flank steak if skirt steak is not available. Consider allowing the meat to rest for 10 minutes, covered with foil, before carving. Depending on your taste preference, you may use lemon juice instead of vinegar. |
