Apple Cider Syrup

1 1⁄2cupclear apple cider
1cuplight brown sugar (packed)
1cupcorn syrup
2tablespoonfresh lemon juice
1⁄8teaspoonground cinnamon
1⁄8teaspoonground nutmeg
2teaspoonlemon peel (freshly grated)
2 granny smith apples (peeled, cored and thinly sliced)


In a saucepan, heat to boiling all ingredients except apple slices. Reduce heat and simmer uncovered for 20-25 minutes or until mixture is the consistency of maple syrup. Just before serving, add apple slices and heat several minutes.
