Apple Semifreddo (with Brandied Cherries)

Ingredients

1cupapplesauce
2 egg whites
1⁄4cupsugar
1⁄2teaspoonvanilla
1⁄2cupheavy cream
18ouncebrandied cherries (i.e. 1 jar)

Instructions

Combine applesauce, egg whites, sugar, and vanilla in large mixer bowl. Beat until fluffy, about 2 minutes.

Beat cream in small mixer bowl until stiff. Fold cream into applesauce mixture. Spoon into small baking pan or metal bowl. Freeze until firm, about 3 hours. Let stand at room temperature 10 to 15 minutes to soften slightly before serving.

To serve, spoon into serving dishes. Top with brandied cherries.

Notes

Prep time does not include freezing time.

As an alternative to brandied cherries, you could also use Cherries in Barolo Wine.
