Apricot Chicken Breasts

6 boneless chicken breasts halves (about 4 ounces each)
2 1⁄2cupwhole-grain multivitamin cereal (slightly crushed)
1⁄2cupdried apricots (chopped)
2tablespoonmargarine or butter (melted)
3⁄4cupapricot preserves
1tablespoonlemon juice
  parsley sprigs (for garnish - optional)


Place each chicken breast half between sheets of plastic wrap or waxed paper. With meat mallet or heavy skillet, pound to 1/4-inch thickness. In small bowl, combine cereal, apricots and margarine. Spoon about 1/3 cup cereal mixture in center of each chicken breast half; fold chicken horizontally in half over stuffing. Place stuffed chicken breasts in ungreased 13 x 9-inch baking dish.

Heat oven to 350F. In small saucepan over medium-low heat, heat preserves and lemon juice until preserves are melted, stirring often. Pour mixture over chicken; bake 35 to 40 minutes, or until no longer pink in center. Serve hot. Garnish with parsley.
