Baked Pork Chops and Apples

Ingredients

6 rib pork chops (1 inch thick)
1 1⁄2teaspoonsage
1 1⁄2teaspoonsalt
1⁄4teaspoonpepper
1poundcarrots (pared)
2cuponion (sliced)
1poundtart cooking apples (pared and quartered)
1⁄4cuplight brown sugar

Instructions

Heat oven to 350°F.

Wipe pork chops with damp paper towels. Trim all fat.

On waxed paper, combine sage, salt, and pepper. Dip both sides of chops in seasoning.

Sliced carrots diagonally 1/2 inch thick. Layer in 3 quart casserole or baking dish. Top with half of onion. Then add chops, slightly overlapping; sprinkle with any remaining seasoning. Cover chops with remaining onion. Arrange apple quarters over all; sprinkle with brown sugar.

Bake, covered, 2 1/2 hours. Remove cover; baste with pan juices. Bake 30 minutes, or until tender.

Let stand for 5 minutes, and then skim off fat.
