Barbacoa Tlaxcalteca (Barbacoa Tlaxcala Style)

Ingredients

4 1⁄2poundlamb shoulders
4largebell peppers
3clovegarlic
2teaspoonchili powder
1⁄4teaspoonclove
1⁄4teaspoonthyme
1⁄4teaspoonmarjoram
1⁄4teaspooncumin
1⁄4teaspooncinnamon
1⁄4teaspoonpepper
1⁄4teaspoonoregano
2 bay leaves
  salt

Instructions

Parboil the green peppers whole then seed and run garlic and peppers through food chopper; mix in all other ingredients except meat.

Now rub the meat on all sides with the dressing and wrap separately in three or four thicknesses of moist white cloth. Place in a dutch oven or heavy clay pot with good seal on top. If seal isn't sure, put a damp cloth over pot with lid on top.

Cook in oven at 275F for approximately three hours.

If you use a little water in the bottom of the pot, be sure to keep the meat above it on a rack.

With this feast serve green sauce and sliced avocados.
