Brandied Sweet Potatoes

Ingredients

6largesweet potatoes
1⁄2cupsugar
1tablespooncornstarch
1⁄2teaspoonsalt
1⁄2teaspoonground nutmeg
1cupwater
1⁄3cupbrandy
1tablespoonlemon juice
1⁄2cuppecans (chopped)
1 1⁄2cupminiature marshmallows

Instructions

Cook sweet potatoes in boiling salted water 25 minutes or until tender. Let cool to touch; peel and cut crosswise into 1/2-inch slices. Arrange potatoes in a lightly greased 13 x 9 x 2-inch baking dish. Set aside.

Combine sugar, cornstarch, salt, and nutmeg in a saucepan; stir to blend. Gradually add water; cook over medium heat, stirring constantly, until mixture comes to a boil. Boil 1 minute. Add brandy and lemon juice; pour over sweet potatoes. Sprinkle with pecans. Bake at 375F for 25 minutes; sprinkle with marshmallows, and bake an additional 5 minutes.
