2cupfresh broccoli (chopped)
4ouncemushrooms (fresh or canned (drain canned mushrooms first))
2cupcheddar cheese (shredded & divided)
1⁄3cuponion (chopped)
2cupbiscuit mix
2 eggs
1⁄4cupparmesan cheese (grated)


Cook broccoli in small amount of boiling water 5 minutes or until tender; drain and set aside.

Brown ground beef in a large skillet, stirring to crumble; drain off pan drippings. Stir in mushrooms. 1-1/2 cups Cheddar cheese, and onion. Remove from heat, and set aside.

Combine biscuit mix and water; stir to form a soft dough. Add remaining 1/2 cup Cheddar cheese; stir just until blended. With well-floured hands, pat dough into a greased 13x9x2-inch baking dish, spreading dough halfway up sides of dish. Spoon meat mixture over dough, and top with the chopped broccoli.

Combine remaining ingredients, beating well; pour over broccoli. Bake, uncovered, at 350F for 35 minutes or until a knife inserted in the center comes out clean.
