Cherries in Barolo Wine (Ciliege al Barolo)

2poundlarge sour cherries (pitted)
1 1⁄2cupsugar
2 1⁄2cupbarolo wine
1 1⁄2cupwhipping cream (whipped)


Combine cherries, sugar and wine in a small pan or casserole, ideally an earthenware one. Slowly bring to a boil, then reduce heat and simmer until cherries are soft, about 30 minutes. Cool. Pour into glass bowl and cover with whipped cream. Serve with glasses of Barolo.
