Down-South Pecan Pie

1 flaky tender pastry (1 crust) (ready and prepared in pie dish)
1⁄2cupbutter (or margarine)
1⁄2cupgranulated sugar
3⁄4cupwhite corn syrup
1⁄4cupmaple syrup (or 2 tablespoons honey)
3 eggs (slightly beaten)
2cuppecan meats
1cupheavy cream (whipped)


Heat oven to 350F. Cream butter well. Add sugar slowly, creaming until light. Slowly stir in syrups, eggs, vanilla, 1 cup nuts. Pour into shell. Top with remaining nuts. Bake at 350F for 55 minutes. Cool. Serve small wedges with whipped cream, flavored with sherry if desired.


You could also substitute walnuts or peanuts, for a unique alternative.
