Grilled Marinated Lamb Steaks

Ingredients

4 lamb steaks (8 to 10 ounces each – cut from center of leg of lamb)
1teaspooncumin seed
1teaspooncoriander seeds
1⁄2teaspoonwhole black pepper
1⁄4teaspooncracked red pepper
1⁄3cupolive oil
1teaspoonsalt
1largeonion (sliced)
1 lemon (juiced)
1clovegarlic (smashed)
1⁄2 lemon (cut into wedges)
4sprigwatercress
  sweet butter

Instructions

Slash the edge of each lamb steak in several places to prevent curling during broiling. Put the cumin seed, coriander seed, black pepper and red pepper in the well of and electric blender. Blend until spices are coarsely ground. Add oil, salt and the lemon juice to blender. Blend a few seconds more. In a shallow bowl combine the oil mixture with the sliced onion and garlic. Add lamb steaks. Marinate about 2 hours, turning lamb steaks several times to coat thoroughly with mixture. Broil lamb steaks quickly over very hot charcoal fire. Brush with butter just before serving. Garnish with lemon wedges and watercress.
