Hearty Sausage and Kale Soup

InstructionsHeat the oven to 300F. Place the sausage links on a baking pan and bake for 25 minutes, or until they are just cooked through. Cut into half lengthwise, then cut the halves diagonally into 1/2-inch lengths. Heat the oil in a stockpot or large saucepan over medium heat. Add the onions, and saute them until they are just translucent, about 6 minutes. Add the garlic and saute for 1 minute more. Add the potatoes and stock, bring to a boil, reduce the heat, and simmer, uncovered, for 15 minutes. Add the sausage and kale, and, if you like, the cream. Simmer for 5 minutes more, or until the soup is completely heated through. Serve hot, with a crusty bread alongside. |
