Ingredients

2cupself rising flour
1⁄2cupsugar
1⁄2teaspoonsalt
3⁄4cupmilk
2 eggs
3tablespoonunsalted butter, melted
1teaspoonvanilla
  unsalted butter for muffin pan

Instructions

Heat oven to 425°F. Butter a 12-cup muffin pan.

Stir together flour, sugar, and salt in large bowl. Blend milk, eggs, melted butter, and vanilla in blender until smooth; stir thoroughly into flour mixture. Fill muffin cups half full with batter; bake until muffins are golden brown, 15 to 20 minutes. Serve warm or at room temperature.
