InstructionsHeat oven to a medium temperature (325F). Put the oil, honey and sugar in a medium saucepan and heat, over a low flame, until sugar is dissolved. Leave to cool a little. Add the cinnamon, ground cloves, nutmeg, the cup of hot chocolate, raisins and almonds and mix well. Finally, stir in the flour. Grease and flour the muffin tin, pour the batter into the tin and bake in heated oven for 20 minutes, or until cakes are golden and springy to the touch. |

NotesFor 1 cup of hot chocolate, combine 1 teaspoon unsweetened cocoa powder, 1 cup hot water and 2 teaspoons sugar. |
