Jazzy Mashed Potatoes

Ingredients

3poundpotatoes (peeled and cubed)
1⁄2teaspoonsalt
1⁄4cupbutter or margarine
1⁄2cupmilk
1⁄2cupsour cream
2tablespoonchives
1⁄4cupparmesan cheese (grated)
  paprika

Instructions

Cook potatoes in boiling water with salt about 30 minutes or until tender. Drain potatoes, and mash. Add butter, milk, sour cream, and chives; mix well. Spoon mixture into a lightly greased 1-1/2 quart casserole.

Bake 350F for 25 minutes; sprinkle with cheese and paprika. Bake an additional 5 minutes, and serve immediately.
