Maine Blueberry Pancakes

Ingredients

8cupunbleached all-purpose flour
1cupsugar
1⁄3cupbaking powder
1teaspoonsalt
2tablespoonmargarine
1 egg
1cupmilk
1⁄3cupsmall, low-bush maine blueberries

Instructions

In a large bowl combine the flour, sugar, baking powder, and salt. Store in a large covered crock. Stir thoroughly and use as needed.

Melt the margarine. In a medium bowl combine 1 cup of dry mix, the egg, milk, and blueberries. Add the margarine. Turn with a whisk and rubber spatula into a very, very stiff batter. (The batter should be barely stirrable but thoroughly mixed. It shouldn't pour.) Drop 1/3-cup portions of batter onto a hot greased griddle. Turn when brown and cook until done.
