Orange-Pepper Steaks

2teaspooncoarsely ground black pepper
4 beef tenderloin steaks (cut 1-inch thick - about 1 pound total)
1⁄2cuporange marmalade
4teaspooncider vinegar
1⁄2teaspoonground ginger


Heat broiler. Press pepper evenly into both sides of beef steaks. Place steaks on rack in broiler pan so surface of meat is 2 to 3 inches from heat source. In small bowl, combine marmalade, vinegar and ginger. Brush top of steaks with half the marmalade mixture. Broil steaks 10 minutes for rare (140F) to 15 minutes for medium-rare (160F), turning once and brushing with remaining marmalade mixture.
