InstructionsDissolve yeast in 1 cup water in medium-size bowl. Stir in 1 cup unbleached flour until smooth. Let rise covered with plastic wrap in warm place 2 hours. Stir down starter. Mix 1-1/4 cup unbleached flour, the cake flour and salt in large bowl. Make a well in center; stir in 1 cup starter. Gradually stir in oil; gradually add 1/4 cup water, working dough into a ball. Knead on lightly floured surface until smooth and elastic, 8 to 10 minutes. (Dough will be sticky.) Let rise covered in greased bowl in warm place until tripled in volume, about 2-1/2 hours. |
