InstructionsHeat oil in a pan with garlic cloves. Place chops on a board. Press into each chop some of the sage (reserving 1 teaspoon for later), rosemary, salt and pepper (heavier than usual). Place in a pan with oil and cook 2 minutes on each side over medium heat. Add 1/2 cup wine and simmer approximately 1/2 hour until liquid disappears, and chops are well browned. Place pork chops on serving dish. Add remaining sage, and fresh parsley to pan sauce. Scrape pan while heating pan drippings, pour over chops and serve. Serve with garlic cloves. |
