Potato Waffles

Ingredients

1cupflour (sifted)
2teaspoonbaking powder
1teaspoonsalt
2 eggs (beaten)
1cupmilk
5tablespoonfat (melted)
1 1⁄2cupmashed potatoes (cooked)
1⁄4cuponion (minced)

Instructions

Sift together flour, baking powder and salt.

Combine the eggs, milk, fat, potatoes and onion. Add to dry ingredients and beat with rotary beater 30 seconds.

Allow 3/4 c batter for each waffle. Bake in hot waffle iron until steaming stops, 3 to 4 minutes.
