Savory Apricot Shrimps

1⁄2cupdried apricots (chopped)
1⁄3cupapricot brandy
2tablespoonunsalted sweet butter
1tablespoonvegetable oil
1 green pepper (cut lengthwise into 1/4-inch strips)
1⁄2cupgreen onions (thinly sliced)
1clovegarlic (minced)
3⁄4poundsmall shrimps (shelled & deveined)
1tablespoonlemon juice
1tablespoonsoy sauce
  hot cooked rice
1⁄4cupslivered almonds (toasted)


Combine apricots and brandy in small bowl; let stand covered 15 minutes.

Heat butter and oil in 9-inch skillet over high heat; add green pepper, onions and garlic. Cook, stirring constantly, 3 minutes. Add shrimps. Cook, stirring constantly, 2 minutes. Add apricot mixture. Cook, stirring constantly, 2 minutes.

Mix lemon juice, soy sauce, cornstarch and pepper in small bowl; stir into shrimp mixture. Cook, stirring constantly, until thickened, about 2 minutes. Serve over rice; sprinkle with almonds.
