Scrambled Eggs with Tortillas

InstructionsHeat the oil in a small frying pan until quite hot, then add the pieces of tortillas and fry until they are starting to brown and are half-crisp. Pour off all but 1 tablespoon of the oil, then briefly sauté onion, chili and cilantro with the tortilla. Add the beaten eggs and scramble over low heat until they are set but still moist. Remove from heat, quickly stir in as much cheese you like, starting with 3 tablespoons or so, and serve. |
