Shoo-Fly Pie

Ingredients

1 flaky tender pastry (1 crust) (ready and prepared in pie dish)
3⁄4cupall-purpose flour (sifted)
1⁄2cuplight brown sugar (firmly packed)
1⁄8teaspoonground nutmeg
1⁄8teaspoonground ginger
1⁄8teaspoonground cloves
1⁄2teaspoonground cinnamon
1⁄4teaspoonsalt
2tablespoonshortening
1 egg yolk
1⁄3cupmolasses
1 1⁄2teaspoonbaking soda
2⁄3cupboiling water

Instructions

Heat oven to 450F. Sift flour with next 6 ingredients. Cut in shortening until mixture is crumbly. Combine yolk, molasses; add combined soda and water. In shell, alternate layers of flour mixture and liquid, with flour on bottom and top. Bake at 450F 10 minutes, then lower heat to 350F for 15 minutes, or until set.

Notes

You may add 1/2 cup raisins.
