Simple Steak Sauce

1⁄4poundunsalted butter
1 1⁄2cupshallots, green onions or scallions (chopped)
1cupwhite wine
1⁄4cupparsley (chopped)
  ground black pepper (to taste)


Melt 1/4 pound of unsalted butter in a skillet and add the shallots. Do not brown them - merely let them blend together and wilt down. Add the salt and wine and bring to a boil. Lower the heat and simmer for 5 minutes. Add parsley and 2 tablespoons of butter. Boil for 3 minutes, add some pepper, and taste for seasoning.
