Sweet and Sour Cucumber Salad

Ingredients

2largecucumbers (or 4 small ones)
1mediumsweet onion (sliced thin)
1teaspoonsalt
1teaspoondry mustard
1teaspooncelery seeds
2tablespoonsugar
3⁄4cupcanola oil (or corn oil)
3⁄4cupwhite wine vinegar

Instructions

Toss together the cucumber and onion slices in a medium bowl. Whisk together the salt, mustard, celery seeds, sugar, oil and vinegar in a small bowl, pour over the vegetables, and toss to blend. Cover and refrigerate for at least 4 hours to let the flavors blend. Serve chilled.
