Sweet Maple Chicken

2 boned chicken thighs
5tablespoonmaple syrup
1tablespoonsuperfine sugar
  grated peel and juice of 1/2 orange
2tablespoonworcestershire sauce
  slices of orange
1sprigflat leaf parsley
  focaccia bread
  salad leaves
  cherry tomatoes (quartered)


Using a sharp knife, make 2 to 3 slashes in the flesh of the chicken. Place the chicken in a shallow, nonmetallic dish.

To make the marinade, mix together the maple syrup, sugar, orange peel, juice, ketchup, and Worcestershire sauce in a small bowl.

Pour the marinade over the chicken, tossing the chicken to coat thoroughly. Cover and leave to chill in the refrigerator until required.

Remove the chicken from the marinade, reserving the marinade for basting.

Transfer the chicken to the grill and cook over hot coals or 20 minutes, turning the chicken and basting with the marinade frequently.

Transfer the chicken to serving plates and garnish with slices of orange and he sprig of fresh leaf parsley. Serve with focaccia bread, fresh salad greens, and cherry tomatoes.
