Toasted Pumpkin Seeds

1cuppumpkin seeds (fibers removed, washed, dried)
  vegetable oil
1teaspooncurry powder (or ground cumin)


Heat oven to 375F.

Place seeds in ovenproof skillet or baking sheet with raised edges (such as a jellyroll pan). Rub vegetable oil on hands; rub seeds lightly to coat with oil. Bake 15 minutes, shaking pan occasionally. Sprinkle salt and curry powder over seeds; toss to mix well. Continue baking until crisp and golden brown, about 5 minutes.
