Turkey Gumbo

1smallonion (chopped)
2tablespoonall-purpose flour
16ouncewhole tomatoes (canned - undrained)
1clovegarlic (minced)
2 bay leaves
2cupcooked turkey (chopped)
1cupturkey broth
10ouncecut okra (fresh or frozen)
  hot cooked rice
  gumbo filé


Fry bacon in a Dutch oven; drain, reserving 2 tablespoons drippings in Dutch oven. Crumble bacon, and set aside.

Add onion to drippings; saute until tender. Stir in flour; cook over medium heat, stirring constantly, 4 to 5 minutes. Add reserved bacon and next 8 ingredients, stirring well. Bring mixture to a boil, and reduce heat; simmer, uncovered, for 1-1/2 hours.

Stir in okra; cook an additional 30 minutes. Remove bay leaves. Serve gumbo over rice. Add a small amount of gumbo filé to each serving.
