Zucchini Parmigiano

2mediumzucchini (cut in 1/2 inch slices)
1⁄2teaspoondried oregano
2mediumtomatoes (cut in eighths)
1⁄2cupparmesan cheese (grated)


In salted water to cover, simmer zucchini slices and oregano 10 minutes or until tender. Preheat broiler 10 minutes. Arrange drained zucchini and tomatoes, cut side up, in shallow baking pan; sprinkle some salt, then cheese. Broil 4 inches from heat, for 3 to 5 minutes or until cheese melts and turns to light brown. Serve immediately.
