Basic Barbecue Sauce

6clovegarlic (chopped)
2teaspooncoarse salt
2 onions (finely chopped)
1cupolive oil (or peanut oil)
1cuptomato sauce (or strained canned tomatoes)
1cupworcestershire sauce
1cupred wine vinegar
1⁄2cupbrown sugar (or honey)
3tablespoongreen pepper (chopped)
1⁄4cupparsley (chopped)


Press the garlic into the salt and add the onions. Heat the oil in a skillet, add the garlic and onion mixture, and let it wilt down and blend thoroughly. When the garlic and onions are soft, add the remaining ingredients. Bring to a boil, lower the heat, and simmer for 20 minutes. Taste for seasoning. You may strain it if you wish, or put it in the container of an electric blender to get a smoother texture. Use the sauce hot or cold.
