Ingredients

12poundcherries
4poundsugar (per gallon of juice)
1⁄4teaspoonallspice
1⁄4teaspooncinnamon
4 blades of mace
1quartbrandy
1quartrum

Instructions

Strain the juice of the cherries through coarse cloth (such as cheesecloth), then boil it with the sugar and spices until all scum has disappeared. Cool; then add brandy and rum. Bottle.

Notes

Preparation time does not include cooling time.
