Chicken Waldorf Salad

1⁄2teaspoonlemon juice
1 apple
1⁄2cupchicken (cooked and diced)
1⁄2cupcelery (diced)
1⁄4cupflaked coconut (toasted)
1smallcarrot (cut into thin strips)
  spinach leaves (or salad greens)


Combine mayonnaise, sugar and lemon juice in a bowl. Cut half the apple into slices; dip in additional lemon juice and set aside. Dice remaining apple. Stir diced apple, the chicken, celery and 3 tablespoons of the coconut into mayonnaise mixture. Serve on crisp spinach leaves; garnish with carrot sticks, apple slices and remaining coconut.
