Country Apple Pudding

4largeeggs (beaten)
1 3⁄4cuplight brown sugar (packed)
2⁄3cupall-purpose flour
1 3⁄4teaspoonbaking powder
2cupwalnuts or pecans (chopped)
2cupgranny smith apples (finely chopped)
2teaspoonpure vanilla extract (sweetened whipped cream)


In large mixing bowl, mix eggs with brown sugar. Add flour, baking powder and salt. Stir in nuts, apples and vanilla. Pour into buttered 1-1/2 quart baking dish. Bake at 325F for 45 minutes. Serve warm with a dollop of sweetened whipped cream on top.
