Peanut Sauce

1⁄2cupchunky peanut butter
2tablespoonhot tea
1⁄2 hot green chili (seeded and minced)
1tablespoongingerroot (grated)
2 garlic cloves (minced)
1teaspoondark brown sugar
1teaspoonfish sauce
1teaspoonlight soy sauce
1teaspoonpeanut oil
1teaspoonfresh lime juice
  salt (if needed)
  coriander leaves (chopped – for garnish)


Combine peanut butter, tea, chili, ginger, garlic, brown sugar, fish sauce, soy sauce, peanut oil, and lime juice in a medium bowl. Stir well to mix. Season with salt, if necessary. Garnish with finely chopped coriander leaves and serve with Chicken Satay.
