Pike's Peak Potatoes

1 1⁄2poundnew potatoes (unpeeled)
  salt and ground black pepper (to taste)
3⁄4cupheavy cream
1⁄2cupchicken stock
1cupswiss cheese (shredded)


Slice potatoes and place in greased 9x9-inch baking dish. Sprinkle with salt and pepper. Mix cream with broth and pour over potatoes. Cover and bake at 350F for 30 minutes. Uncover and bake for another 30 minutes. Sprinkle with cheese and return to oven until cheese is melted.
