Pisco Sour

Ingredients

1 1⁄4ounceperuvian pisco brandy
2ouncefresh lemon juice
1⁄2teaspoonegg white (per cocktail)
1teaspoonsugar (or less)
  algarrobina bitters

Instructions

Shake all ingredients except bitters together with ice. Top with algarrobina bitters, which is a vegetable tonic made from a Peruvian plant. It adds highlights to the drink.

Notes

There are many different ways to make Pisco Sour depending on which part of Peru, or for that matter Chile, you visit.
