Polish Hamburgers

1⁄2poundground lean beef
1⁄2poundground veal
1teaspooninstant minced onion
1⁄4teaspooncelery salt
1⁄4teaspoonground black pepper
1⁄16teaspoonground nutmeg
3⁄4teaspoonlemon juice
1largeegg (beaten)
1tablespoonbutter or margarine (softened)
1dashground black pepper


Combine the first 9 ingredients. Mix well. Shape into 4 patties. Mix butter or margarine with remaining black pepper. Spread an equal amount over each patty. Oven broil or pan fry until meat is done, turning to brown both sides. Serve in warmed hamburger buns, or as the meat course with potatoes and other vegetables.
