Polynesian Scrambled Eggs

1 egg
1tablespoonpineapple juice (unsweetened - or coconut milk)
1teaspoonpowdered soya (or dry milk solids)
1teaspoonfresh coconut (unsweetened - grated)
1teaspooncrushed pineapple (unsweetened)
  sesame seeds (optional)


Scramble the eggs in the usual way by beating well, then blending in the pineapple juice or coconut milk, soya powder and kelp. Add coconut and pineapple and put in a well-oiled skillet over a medium flame, stir until of right consistency. Sprinkle each serving with sesame seeds. Serve immediately.
