3 egg whites
1cupall-purpose flour
1cupwhole wheat flour
1⁄4cupwheat germ
2teaspoonbaking powder
1teaspoonbaking soda
1teaspoonpure vanilla extract
1⁄3cupsafflower oil (or corn oil)


Spray waffle iron with vegetable cooking spray and heat on high. In a large bowl, beat egg whites until frothy. Set aside. In separate large bowl, combine buttermilk, flours, wheat germ, baking powder, baking soda, vanilla and oil. Fold dry ingredients into egg whites until smooth. Pour batter onto center of hot waffle iron. Bake about 5 minutes or until steaming stops. Do not over-bake or waffles will be dry.
