Deviled Eggs (Oeufs Diablés Froids)

Ingredients

3 hard-boiled eggs
1pinchsalt
1⁄2teaspoondijon mustard
2tablespoonmayonnaise
3teaspoontartar sauce
 dashpaprika

Instructions

Cut eggs in half lengthwise. Rub yolks through a sieve. Add salt, mustard, and mayonnaise. Mix well. Place whites on serving dish and fill them with egg yolk mixture. Coat them with Tartar Sauce (or additional mayonnaise) and sprinkle them with paprika.

Notes

Variation: add Tartar Sauce to mixture and fill eggs.
