French Omelette

1tablespoonunsalted butter
3 eggs (room temperature)
1tablespooncold water
1⁄8teaspoonwhite pepper


1. Melt the butter in a small skillet or omelette pan.

2. Beat the eggs with the water, salt and pepper for about 1/2 minute or until frothy.

3. Pour into the skillet and cook over a medium heat. As the eggs cook on the bottom, lift the omelette so the uncooked portion can flow underneath.

4. When the omelette is just set (but still creamy and moist on the top), slide onto a warm plate and serve immediately.
